Grandma's Potato Rolls


Our family recently gained an greater appreciation for our grandma's special recipes, especially after this past weekend when her husband passed away. Grandma Cheryl and Grandpa Dale are Kory's grandparents who lived in Logan their entire marriage, whom we would visit every LDS General Conference. Kory's grandpa, in particular, was a kind-hearted man with a gentle hand for children. A few years ago, he was diagnoses with pancreatic cancer and was told the cancer was so slow-moving that he would most likely die of old age before the cancer. But then last October, he found out that the cancer has migrated to his bones. By February 3rd, he had passed away.


Because of his surprising quick death, we realize how precious a family legacy can be to those you leave behind. These potato rolls have been our number one staple at every family gathering they've had. When some rolls overly crispy and only good for holding butter, these rolls are goodness all around. They are soft and fluffy, like a buttery cloud of pure love. Food is Grandma Cheryl's love language. Love you can eat.


So as you can suppose, this recipe needed to be written down and safe-kept. For when she finally get to return to her beloved husband's side, future generations will be able to enjoy her love and legacy.



INGREDIENTS:

3/4 cup shortening 1 cup Instant Mashed Potatoes (prepared 3/4 cup water & 1/4 potatoes) 1/2 cup sugar 2 tsp salt 2 eggs, beaten 1 cup prepared powdered milk 1 TBSP yeast, dissolved in 1 cup warm water 7 cups flour (use 6 at first and then add last cup 1/2 at a time) DIRECTIONS:

1. Mix all ingredients, following the individual instructions above. 2. Let rise for 1 1/2 hours. 3. Punch down and let rise again for another hour. 4. Roll out and use a circle cookie cutter (or cup approx. 3 inches across) to create each individual roll. 5. Grease cookie sheet (we like the Costco jelly roll pan) and place cut dough 4 inches a row.  Fold each one over (see picture) and press edges together with greased fingers (use melted butter or cooking spray).

Bake at 375 F for 15 mins until done golden brown on top.

Butter the tops and serve.

Best served with butter or Homemade Raspberry or Strawberry Jam (recipe coming soon)
