Homemade Fudgy Brownies


I love chocolate! That's an understatement... Correction: I LIVE by chocolate. Once upon a time, I tried to do the Keto diet with my husband and I hopelessly failed because I could not for the life of me give up my sweets, especially chocolate. I also can't stand artificial sweeteners, so that made it even harder to quench my sweet tooth. Although, I do have MANY Keto recipes I swear by and love, it was the little bit of sugar I failed to give up. But Keto recipes is another story.


I got fed up with boxed brownie mixes that I finally ventured out and found a homemade recipe I loved. I tweaked it a little bit of course and low and behold, my brownie recipe was born. :)

INGREDIENTS:

3/4 cup cocoa powder, any variety you prefer.

1/2 tsp baking soda

2/3 cup butter, melted and divided (1/3 c & 1/3 c)

1/2 cup boiling water

2 cups white sugar

2 eggs

1 tsp vanilla

1 tsp salt

1 1/3 cups all-purpose flour

3 cups chocolate chips (adjustable to taste. Me = more the better.)


DIRECTIONS:

1. Set oven to 350 degrees F.

2. Mix cocoa and baking soda in stand up mixer.

3. Add 1/3 c melted butter until smooth. Add boiling water until smooth.

4. Add sugar, eggs and remaining melted butter. Beat smooth.

5. Add vanilla and salt.

6. Add flour. Beat until fully incorporated. Add chocolate chips to the desired amount. *Note: If you omit the chocolate chips, the flavor of the brownies comes out a little lacking. I don't recommend omitting them.

7. Pour into a greased 9x13 glass pan. Bake at 350 for 35-40 minutes. Edges should be crispy and middle should be gooey!
