Mama's Coleslaw

I grew up not liking coleslaw. I used to think it was weird to put mayo all over cabbage and I felt like that's all I could taste. I also didn't understand why someone would put sugar in it?! Why make a healthy recipe unhealthy by adding sugar? (Yes, we believe mayo is not unhealthy. Good fats are good for you, people.) One day I went to a Barbecue restaurant where their slaw with a lot more vinegar than mayo and I LOVED the acidity! So I started experimenting and discovered a recipe that not only impresses but blows people's minds!
It is also keto and gluten-free friendly. Healthy side to any BBQ (see our Smoked Chicken recipe for a great mate to this dish)



INGREDIENTS:
1/2 head green cabbage
1/3 head red cabbage
1 cup shredded carrots
Dressing
1 cup Mayo (I am partial to Best Foods brand)
1/8-1/4 cup Apple Cider Vinegar
1-2 tsp lemon juice
1/4 tsp pepper
1/4 tsp salt (adjustable to taste)
dash Cayenne pepper (we like spicy so our "dash" is fairly large)
DIRECTIONS:
1. Chop cabbage extremely fine, as fine as you can get it. (You can use a food processor if you'd like.)
2. Combine cabbage and carrots in a large bowl, set aside.
3. Mix dressing ingredients in a bowl and add to cabbage/carrots.
4. Toss and enjoy!
