We have had a lot of chocolate chip cookies over the years. But finally, our Uncle Mark, created his own recipe and it has been a family favorite ever since. These cookies stay soft, they're not flat (that's what happens when you use butter), and they gooey inside = absolutely amazing. I can't tell you how many times we have been asked for this recipe and how many times people have told us later that this is now the only cookie recipe they use. We usually half this recipe because it makes a lot. But you can always freeze them before or after baking (After: good after 20 seconds or so in the microwave.) It could be a great solution to the small random cravings without going overboard.
INGREDIENTS:
1/2 cup margarine
1 1/2 cup shortening
1 cup sugar
2 cups brown sugar
4 eggs
2 tsp vanilla
5 1/2 cups flour
1 tsp salt
2 tsp baking soda
3 cups semi-sweet chocolate chips (about 1 and a half packages)
DIRECTIONS: Bake at 350 F for 8-10 minutes (I highly recommend starting at 7 mins and watching until they are the consistency you like). We like our cookies gooey and soft inside with a little crisp edge. The bottom of the cookie should be a LIGHT brown color, not dark when they come out of the oven. Let them rest for a couple minutes before taking them off the cookie sheet.
